Lentil Shepherds Pie

Serves 3-4

Ingredients

1 tbsp Olive Oil

2 x Carrots (diced into small cubes)

1/2 cup Peas

1 x 400g can Brown Lentils (drained & rinsed)

1 x 400g can Diced Tomatoes

2 tbsp Italian Herbs

1 x Vegetable stock cube

100mL Red Wine

1/4 cup Water

1 x Sweet Potato (cut into large cube)

Parmesan Cheese to sprinkle on top

Method

  1. Heat olive oil in frying pan. Add carrot and cook for a 2-3 minutes

  2. Add Italian herbs, red wine, 1/4 cup water, tinned tomatoes, and stock cube. Simmer for 10 minutes. Add lentils and simmer for a further 10 minutes

  3. Meanwhile, boil sweet potato in pot of water for 15 minutes or until soft. Drain water, and mash.

  4. Place lentil mixture into a pie dish, and top with sweet potato mash. Sprinkle over Parmesan cheese & cracked pepper

  5. Cook in preheated oven (180 degree celcius) for 20 minutes

*Once cooked, let the dish cool for at least 10 minutes before serving
